Bioquímica de Alimentos
La importancia de los productos del mar en la nutrición de nuestras comunidades, junto con el impacto que pueden tener sobre el medio ambiente, hace necesarias actuaciones que aumenten nuestra seguridad de cara a su consumo al tiempo que disminuyan su coste ecológico.
El Grupo de Bioquímica de Alimentos del IIM-CSIC trabaja en el desarrollo de herramientas y bioprocesos para demostrar que es posible conseguir un sector pesquero sostenible, responsable y resiliente mediante la promoción del uso integral de los descartes y subproductos pesqueros y el desarrollo de herramientas basadas en marcadores moleculares para mejorar su trazabilidad y autenticidad. Con este objetivo, el grupo de Bioquímica de Alimentos investiga en torno a tres líneas de trabajo principales.
La primera línea se centra en el desarrollo de herramientas analíticas que permitan identificar y cuantificar organismos marinos gracias a marcadores genéticos moleculares y controlar así la trazabilidad y el etiquetado de los productos del mar. El grupo contribuye a mejorar la trazabilidad y sostenibilidad de los productos del mar mediante el desarrollo de herramientas para prevenir el fraude alimentario.
La segunda línea busca desarrollar bioprocesos para poner en valor los descartes y subproductos pesqueros. De esta forma, el grupo pretende obtener compuestos bioactivos, como el colágeno, la quitina o los hidrolizados de proteínas de pescado, que son de utilidad en diversas aplicaciones industriales.
Por último, la tercera y no menos importante línea de trabajo consiste en el desarrollo de herramientas e infraestructuras electrónicas para cuantificar las capturas totales y analizar las condiciones espaciotemporales óptimas que contribuyen a una mayor eficacia de las estrategias de pesca.
